I read alot about different watch brands and 2 of my favorite are Ollech Wajs and Cuervo Y Sobrinos. I just love manual wind vintage chronos.and day and date. I did find one dealer on Ebay called mylocaltime this guy has a great collection of vintage chronos and day and date manual and automatic watches for sale.But what I really like about him mylocaltime is that he shows you pictures of almost all of his overhauls from disassembly to assembly and the timing... and his prices are not that bad for what he does. The only problem is that he is in Cyprus But I've never had a problem.

I've heard good things about OW but i am not familiar with the other brand.

I am familiar with both brands, though don't know much about C Y S. The ebay seller of O and W that you mentioned is asking WAY too much money for his pieces. There is a California vendor who routinely gets NOS chronos and sells them for under a grand. Non- chronos are way under 500 U.S. Dollars. I would steer clear of the seller from Cyprus. If you want the U. S. Seller's info, shoot me a pm. I can personally vouch for his integrity.
